With a <strong>stronger and more flavorful<\/strong> <strong>taste<\/strong> than fresh ricotta, aged salted ricotta is produced by following a longer process.<\/p>\n<p>In fact, fresh ricotta is drained a few days and then covered with a thick layer of <strong>sea salt<\/strong>, a process that is done strictly by hand. Once the <strong>salting process<\/strong> is finished, the ricotta is <strong>aged<\/strong> for a few days.
