The wheat is treated in such a way as not to alter in any way the nutritional properties and distinct fragrance of this variety.
The flour is ground using cylinders and Russello pasta is bronze drawn.
No other ingredients are present in addition to the Russello variety semolina flour and mineral water from a natural Sicilian spring located in the Nebrodi Mountains.
